Tuesday Night 11/30/2010

Happy end of November!

Tonight will have to be quick, I should get to sleep soon and I was just now able to get on the computer.

So.  Uhhhhhhhhhh not much to post about... hmm..

OH YEAH! :)  I'm going to Amy's orchestra concert tomorrow!  I haven't seen her since last year, her parents are really strict and she's never allowed to hang out so we never got a chance to see each other :(  But now we will!! Tomorrow!  So excited! :)  I love you Amy!

Cinnamon Vanilla Steamer ♥Microwave a mug of milk for two minutes on high (more if you like to burn yourself :]]) and mix in 8 sugar cubes, two drops of vanilla and 1/4 tsp. of cinnamon (or just a shake of it :]]) and WALLAH! :D

Random pictures are a no-no tonight, I didn't take any pictures for them today because I was sort of busy.  I'm done Christmas shopping by the way!! I just have to make treats for my friends at school later this month and that's IT! :)  Phew!

Sunday Afternoon 11/28/2010

S.I.P Charles.  Swim in peace.  My goldfish, Charles died about a half hour ago.  It made me sad... but I kind of knew it was going to happen.  We got him from the lake, then he was used as bait, then he was put in a tank, then he was switched to ANOTHER tank, my tank.  So he went through a bit more than a fishy should.  I've only had him for a week, thank gosh I didn't get too attached.  I'm thankful that I had him at all though :)  And I still have my purple Beta, Mr. Tartlet.  He's two years old and still swimmin' :)

pan seared salmon recipe blog

Pan-Seared Salmon

2 salmon fillets
Dale’s Steak Seasoning
McCormick’s Grill Mates Steak Seasoning
1 tbsp olive oil
1 tbsp butter

Marinate the salmon fillets, skin side up, in a small dish for 30 mins in Dale’s Steak Seasoning. After 30 mins, begin heating a skillet large enough for the fillets over high heat. Season fillets with McCormick’s Grill Mate’s Steak Seasoning. Once the skillet gets hot, add butter & olive oil to the skillet and let it heat up. Reduce heat to medium high, then add fillets, skin side down. Cook until skin is well browned and the bottom half of the fillets turn opaque, about 5 mins. Turn fillets over and cook for another 3-5 mins. At this point (right after flipping over) the skin should be very easy to remove with fork and knife. Turn the salmon over and sear briefly (1-2 mins), or until desired doneness is reached. When the fish is done, it should still show traces of bright orange when you peek inside the fillet with the tip of a paring knife.

Saturday Night :) 11/27/2010

'Ello there loves :)

Today was a gooooood day again, I found myself busy all day!  It was great :)  When I was busy though, I thought as well.  I'm getting better with dealing with my thoughts.  I'm trying to teach myself how to think of the good things, but not shut the bad things completely away.  I keep telling myself that the bad things have already happened and it's time to let them go, it's not like they're still going on.  Self counseling :)  I bet you're proud of me Dad, I don't have to be one of your patients now ;)

Speaking of Dad, he bought me a crap load of new expansions and stuff packs for Sims 3! :D It's part of my Christmas present but he had to give it to me now.  I mean, it was a sale online and it was download only.  The sale is only this weekend.  So there's no way he could've kept that from me X)  Thanks!!! I can't wait to play them, Dad! :D

Yeah, um so onto the recipe! :D From Darjeeling Dreams



Apple Brie Walnut Tart  

1 all-butter pastry shell with 1/2 tsp freshly grated nutmeg
3 tbsp (light) honey
1 1/2 tbsp butter
1/4 cup chopped walnut (can substitute pecans)
6-7 oz brie, thinly sliced
3-4 small Honeycrisp (or similar crisp-sweet baking apple), coarsely peeled, cored, sliced into 1/8 rounds
1 tsp juice from a lemon (preferably a meyer lemon)
5-7 sprigs of thyme, leaves only

See here for all-butter pastry shell recipe. During the first step of combining flour and salt, add the nutmeg.

While shell is blind-baking: Melt together the honey and butter, set aside. Prep apples by coarsely peeling, coring, and slicing into 1/8 doughnut-shaped rounds, and pour lemon juice over apples. Prep brie by slicing as thinly as possible. Melt together the butter-honey mixture.

Assemble tart: Preheat oven to 395°f. Gently press all but 1 tbsp of the walnut pieces into the prepped shell. Over this, layer brie slices as evenly as possible. Next, layer apple slices in two rows, make sure that the slices overlap in a manner that covers the cored area (see photograph of tart). Sprinkle remaining 1 tbsp of walnut pieces. Then, use a pastry brush to apply the honey-butter mixture. Sprinkle 1/2 of thyme leaves onto the tart. Bake for 15 minutes.
Remove from oven. Sprinkle remaining thyme over tart. Allow to cool for 10 - 25 minutes before removing from pan and slicing. This tart is best served warm.

Friday Night! ♥ 11/26/2010

Today is the happiest I've ever been!!!! Well, not ever been, but the happiest I've been in a LONG time!

I don't really know why, but today was just a really good day.  I kept thinking about all these different things that made me happy, and I just got super excited and hyper and stayed that way!  Which is odd becaaaauuuuusssssee...  I have always hated thinking.  I have always hated being bored or alone because then I have nothing to distract my mind from thinking about things.  Things that make me sad, things that make me depressed and in such a horrible state that it's hard to pull out of it.  So I'm very happy that today when I was 'forced to think' by my boredom, it resulted in an amazing day full of happiness.

So!  Since I haven't been on in a while, I will catch you up with a couple things!

I spent Thanksgiving break with my Nana :)  ♥♥♥I love my Nana!  We had lots of fun and made lots of food!

Thanksgiving was delicious and super fun despite the Cowboys losing to the stupid Saints! >:(  It was 23-27 Cowboys for like five minutes!!!!!!!  We could have shoved the Saints into the dirt if we wanted to...we were just giving them a little ego boost.  That's all.  That's the only reason we lost.  I swear.

Told you only a couple things!  Haha, nothing much has gone on since the last time I blogged. :) 

So!  The last post that was on my blog, http://kranberriesjuicies.blogspot.com/2010/11/amy-blogging.html was a guest write!  I let my best friend, Amy, write on my blog!  :D  I think it's so cool that she put that video on there, I have no chizzing idea how to do that. (About the video; I love that song so much!  I've been listening to it over and over and over while I write this post!!! You introduce me to such amazing music, Ames!) She's going to let me write on her blog soon and I'll post a link when I do :))  Thanks Amy, I love you and all the things you said were so very sweet♥

Recipe!!!!!!!! Geez!  I haven't posted a full post with a recipe in so long that I bet all 7 (WHOA! 7!) of you followers are starving! from Crave. Indulge. Satisfy.  By the way, I was kidding about the 7 followers, I'm grateful for all of you♥, believe me :)


Pumpkin Pecan Chocolate Chip PieIngredients:
-3/4 cup sugar
-1/2 tsp salt
-2 tsp cinnamon
-2 large eggs
-1 can (15 oz) Libby's 100% Pure Pumpkin
-1 can (12 oz) evaporated milk
-1 unbaked 9-inch deep-dish pie shell

Pecan Chocolate Chip Topping
Ingredients: (mix all together and set aside)
-1 cup chopped pecans
-1 cup semi-sweet chocolate chip
-1/4 cup light brown sugar
-2 Tbsp melted butter

  • Mix sugar, salt and cinnamon in small bowl.
  • Beat eggs in large bowl.
  • Stir in pumpkin and sugar-spice mixture.
  • Gradually stir in evaporated milk.
  • Pour mixture into pie shell.
  • Bake in preheated 425 degree oven for 15 minutes. Reduce temperature to 350 degrees and bake 40 minutes.
  • Remove pie from oven and add Pecan Chocolate Chip topping. Bake an additional 10 minutes or until knife inserted in center comes out clean.
  • Cool on wire rack.
Hoorah!  There you go!!

Day 11!

Kay.  My siblings.  Well, if we have to be technical about things, I only have three siblings.

Allison.  The oldest.  I think she's 24.  :)  She's super nice and is a great big sis

Hello darling! :)

Lots to catch up on, yes?

A few nights ago I made those chips I posted about before.  Remember them?  Well this time I used my two cookie cutters and instead of salt, I put sugar and cinnamon on them!!!! :D  It was my mom's request :)

Yeah, the cocoa doesn't look too good because of the melted whipped cream.  I guess that's why they use shaving cream in food photography instead of actual whipped cream.  :P

OH MY GOSH the hot cocoa was sooooo delicious.  I actually didn't finish mine, it was SO good.  It was super rich and chocolatey :)  Like it should be! :D  The chips were pretty tasty too :)  And cute!

My parents seemed to enjoy this treat! :D

And thennnnnn I also made chili and corn bread (I think I made that last night.)  Not from scratch, but still :)


Yeah, yeah, I used a whisk to stir the chili while it heated up X) It was the only stirring thingy we had clean and I'm WAY to lazy to wash dishes. :P

It was reaalllllllyyyyyy good.  The chili was 'roasted tomato' flavored :)  I liked it!

Recipe :) from Kevin and Amanda



Creamy Chicken & Dumplings


1 lb chicken breasts
10 bouillon cubes
2 quarts water
2 cups bisquick
2/3 cups milk
2 tbsp butter
4 eggs
2 stalks celery
Place chicken breasts & bouillon cubes in a large pot & cover with 2 quarts of water. Bring to a boil, reduce heat to medium and simmer for 20-25 mins until chicken is done.
Meanwhile, boil the eggs. Then mix together the bisquick and milk until soft dough forms. When chicken is done, remove from pot and set aside. Drop spoonfuls of dough into the chicken stock. Simmer over low heat, covered, for 10 mins, then uncovered for 10 mins.
Meanwhile, dice 2-4 stalks of celery until you have approximately 1/2 – 1 cup of diced celery. Cut or shred chicken into bit sized pieces. Saute celery in 2 tbsp of butter for a couple of mins. Add in chicken & season well with salt and pepper. Stir to combine. Add the chicken and celery to the soup. Remove yolk from boiled eggs and chop whites and add to soup. Stir all to combine. Serves 4.

Hi! :D

SO!  On December 1st I'm going to the Orchestra concert back at my old school because my best friend, AMY, is going to be in it!  My other friend Brielle (who is also going to a different school this year) is going too so I'll get to see her! :D I'm so excited :) And I just can't hide it :P

Um, so now I'm going to post a reallllyyy yummy recipe, I'm going to make it for part of Thanksgiving dessert and substitute the red and green M&M's for like orange and yellow or something :)

5 Minute Fudge Wreath (adapted from Rachel Ray)

Ingredients


12 oz package semisweet chocolate chips
1/2 cup milk chocolate chips
1/2 cup butterscotch chips
14 oz can sweetened condensed milk (save the can)
1 teaspoon pure vanilla extract
8 oz chopped walnuts
1/2 cup red & green M&Ms
softened butter to grease and 8-inch round cake pan

  • Grease an 8-inch round cake pan with softened butter. Pour the chocolate and butterscotch chips, condensed milk and vanilla into a medium saucepan. Put the pan on the stove and turn the heat to low.
  • Cover the empty condensed milk can with plastic wrap and put it in the center of the round cake pan.
  • Stir the chips and milk until they melt together, about 3 minutes. Stir in nuts and M&Ms. Scoop the fudge into the cake pan all around the plastic-covered can in the center to form a wreath or ring shape. let it be all bumpy on top. Keep pushing the can back to the center if the fudge moves it away from there. Garnish the fudge with red & green M&Ms.
  • Put the fudge in the fridge to chill until firm. Remove the can from the center, then loosen the sides and bottom of the fudge with a knife. Cut the fudge into thin slices and serve.

Uhhhmm...

I don't know.  I've found it easier just to believe in life, not anything beyond it.  Not why it is the way it is.  It's just simpler to live life without the stress of religion or spirituality.  To me.  I'm not saying that I don't believe in a god or gods, or even that I don't pray.  I don't know if God or multiple gods exist, they might, they might not.  I do pray though.  To whom?  I don't know.  Just whoever is out there listening.  Sometimes I've felt there is something beyond my comprehension guiding me through pain to the happier side.  But.  I don't know who it was.  I really like this song from NSN though, it SORT of explains how I feel about the whole "God" thing.

Tuesday Night 11/16/2010

Not in the mood to blog.  But I am.  I feel weird.

I cleaned my room.  It feels really refreshing to be organized, I love it. 

Drama with friends is hard.  >.<  Yeah, I know, drama happens.  But still, that doesn't make the current drama less frustrating.  I really really really really don't like it when I'm in the middle of a big situation that I have nothing to do with in the first place.  I love my friends, I'm always here for them.  Sometimes it's too much though. 

Dear current situation:

I love all of you guys.  Don't make me choose or say something bad about someone I love.  I don't even understand why all of this is such a big deal, you guys are terrific friends and you shouldn't let something so small come between you.

Alright, back to reality.  I'm slowly getting happier about things, but it's so hard to be responsible about EVERYTHING, I mean, it's hard to be perfect.  I know it's okay to make mistakes.. but I need to stop making the ones I know how to avoid.  But school's important, and so is being happy and organized.  So I'm still trying.

Chicken Fettuccini Alfredo


Chicken Fettuccini Alfredo!

Ingredients

  • 6 skinless, boneless chicken breast halves - cut into cubes
  • 6 tablespoons butter, divided
  • 4 cloves garlic, minced, divided
  • 1 tablespoon Italian seasoning
  • 1 pound fettuccini pasta
  • 1 onion, diced
  • 1 (8 ounce) package sliced mushrooms
  • 1/3 cup all-purpose flour
  • 1 tablespoon salt
  • 3/4 teaspoon ground white pepper
  • 3 cups milk
  • 1 cup half-and-half
  • 3/4 cup grated Parmesan cheese
  • 8 ounces shredded Colby-Monterey Jack cheese
  • 3 roma (plum) tomatoes, diced
  • 1/2 cup sour cream

Directions

  1. In a large skillet over medium heat combine chicken, 2 tablespoons butter, garlic and Italian seasoning. Cook until chicken is no longer pink inside. Remove from skillet and set aside.
  2. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  3. Meanwhile, melt 4 tablespoons butter in the skillet. Saute onion, 2 tablespoons garlic and mushrooms until onions are transparent. Stir in flour, salt and pepper; cook 2 minutes. Slowly add milk and half-and-half, stirring until smooth and creamy. Stir in Parmesan and Colby-Monterey Jack cheeses; stir until cheese is melted. Stir in chicken mixture, tomatoes and sour cream. Serve over cooked fettuccini.

So! Lately I've not had much to say...

Peanut Butter Rice Krispy Treat Topped Brownies

Peanut Buttery Snap Crackle ‘n Pop Brownies

1 box brownie mix, prepared in a foil-lined baking dish
1 cup sugar
1 cup light corn syrup
1 1/3 cups peanut butter
1 teaspoon vanilla
4 cups Rice Krispies

Prepare brownies in a foil-lined baking dish. Heat sugar and corn syrup in a heavy bottomed saucepan over high heat until mixture reaches a boil. Remove from heat. Stir in peanut butter and vanilla until smooth. Pour over rice krispies and stir to combine. Immediately press the peanut butter and rice krispies mixture over the brownies.

Day 7!

Your best friend.

This one is so hard.  Because I have so many friends and I hate to choose who's best.  I blog about Amy all the time, she definitely is one of my best friends.  Since I tell you about her so much though, I think I'll pick someone else.  I'll pick... Randy. :)

Randy, you're my best friend at the moment. 

He's my best friend because he's so amazing in every single way.  He's awesome at guitar.  I find it extremely hard not to have admiration for people that have a great passion for something.  His passion is so obvious and so extreme, he loves music.  He is music.  And he's easy to be friends with because he shares it so much :)

Also, he's really funny.  X)  Remember how once I blogged about how all my friends are witty, not just funny?  Well Randy is definitely witty.  He's really smart so when he cracks a joke, it's genuinely funny.  In some ways he's not so smart as well so he makes fun of himself for it and it's really funny.  :)  It's easy to be friends with someone who makes you laugh and smile so much :)

He's a good person.  He sticks to his word, and he's firm about it.  He doesn't easily get mad about things, he avoids drama so much that it's hard not to follow his ways in that.  And he loves to talk.  :)  About interesting things.  Not just high school crap.

So that's why I love you, Randy, you're an amazing friend and I'm glad that I had the chance to blog about you like this.  :)

Day 6!

Your day.

Perfect because I want to share this absolutely ridiculously exuberant day with you! :)

This morning I woke up not too excited, it's game day and I never bought a ticket so I knew that meant being bored at school all day.  Well guess whaaaaat :))) I wasn't.  In fact, this was the best school day of the year so far.

We all went to first period.  Mine was biology.  We had a quiz.  And I know I did good on it, I studied hard for this one and was confident with most of my answers :D

Then we had to go to second period, show them our permission slip and then go to the buses.  I didn't have a permission slip so I was supposed to go to the South Balcony with the PA (Performing arts) theatre class.  :))  There was like fifteen of my friends there that weren't going to the game either! :D

We played 'Manner of the Word', 'Do You Like Your Neighbor' and another game that I forgot the name of.  Theatre games are the best.  I promise.

Also, the rule was if you had a PA class that day, you went to it.  If not, you went to the South Balc.  So after spending second hour playing theatre games, we all went to lunch.

They only served pizza.  Fine with me. :)

We ran up and down the empty hallways and the commons, it was super fun to have the school to ourselves.  We played hacky sack in empty classrooms and tag in the commons and hide and seek in the basement! :D

Then we went to third hour or back to theatre games.  I had to go to ballet.  IT WAS THE BEST BALLET CLASS EVER.  We started out with Professor Trance (The exercise you'll hate the most in your whole life but will see and feel results from the quickest!  I love it even though it huuuuuurrrrrrrrrttssssssss).  Then we danced modern the whole class.  I am so taking Modern next year! :D  Ballet is very, very, veeeeeerrrryyyyyy hard and a great workout.  Don't get me wrong.  But modern is more fun and fast (most times) and you get to move so so so much more.  I love it :)  I still love ballet though.  :)  We did a lot of complicated combinations that were so fun and we even did ABCD (you think your legs hurt now?  Try doing abcd)

After that, I went back to theatre games and did that for a while.  Then in theatre games we all did yoga which felt nice since I had already been working out hard not too long ago.  After yoga she said to go hang out in the dance studio :)  So of course we jumped at that, went back down to the studio and practiced our dances she had taught us the hour before.  We had so much chizzing fun.

When I got home I did the dance over and over for about fifteen minutes and then stretched and did yoga until it was dinner :)  Today I bet you FIVE DOLLARS that I lost three pounds of fat and gained two pounds of muscle.  Five bucks :) I feel so strong lately, and I'm getting more and more flexible with each day.  I love to move, I just love it. :)  So I'm going to go do it some more, I'm going to watch TV and stretch for a bit and then catch some Zzz's. :)

Good afternoon darlings :)

I'm sorry to all that follow my blog, because I'm behind.  And I know a few of you actually get excited when I post.  So yes, I'm sorry :)  Here's all the crap:

Still sick, feeling worse again today, but seeing my friends everyday at school makes my day so SO SO so so so so very much more wonderful.  Still taking medicine for it, should be getting better soon.  OH!  I forgot to ever say what I have X) I have strep.  And a baaaaad case of it.  Glad it wasn't mono though :)

MONEH MONEH MONEH! :D  I love money ^-^  We have had just a tiny bit extra lately because my dad got his $8,000 from school on Monday :)

Yesterday we went to dinner at Chili's! :D


That was my dad's dinner, he had delicious fajitas, it was like the fajita trio or something, chicken, steak and shrimp :)

I got ribs :) I forgot the name ::blush:: but they had a DELICIOUS dry rub and barbecue sauce :)  They came with corn on the cob.  Correction:  They came with the BEST corn on the cob I've everrrrrrrrrrr had.  It was YUMMY!!!!!!!!!!!! Oh yeah, and my ribs were only a half rack of ribs.  But I ate all of them and sucked them clean :D I didn't take a picture of them at first because the plate wasn't that pretty like my dad's, it was just ribs and corn.  Very ugly picture. ::nods::  So I was going to take a picture of my empty ribs stacked all pretty on the plate but I forgot >.< Sorry.  And I had a very goooooood mango iced tea!  It was heaven!

Then.  We went to Best Buy :))  My dad was looking at getting a laptop for taking notes in school and stuff like that but he's not much of a laptop man.  So he decided that would have been a waste.  Then we went next door to Barnes and Noble and I got two books!!!!!! :D *Thanks Dad :)* I got Wake (first book) and Fade (second book) by Lisa McMann.  :)

THEN!  We went to Walmart and got a new Xbox 360 Kinect 250GB :) and the game Dance Central :)  And the free game that comes with it.  :)  So that was our spending! :D  I think we're done shopping for those kind of things now though.  Cause we still need to move and get my dad a car. :)

Nutella Swirl Blondies Recipe

Blondies


1 1/2 sticks butter
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup light brown sugar
1/2 cup dark brown sugar
2 eggs
1 teaspoon vanilla extract

*Nutella – optional


Directions:

Preheat oven to 350 degrees F. Grease an 8×8″ baking dish. (Line with foil, wax or parchment paper if desired. Grease the lining too.)
Melt the butter in a medium, heavy-bottomed saucepan over medium heat; add both sugars and whisk until combined and sugar is melted, about 5 minutes. Remove from heat and set aside to cool slightly.
Meanwhile, whisk together the flour, baking powder and salt in a medium bowl.
Next, in a large bowl, whisk together the eggs and vanilla extract until combined. Slowly drizzle in the butter and sugar while whisking constantly. Then add the flour and whisk until just incorporated.
*Now, at this point you could fold in your favorite add-ins: chocolate chips, milk chocolate chunks, nuts, etc. Me? I like mine just plain, baby.
*To make Nutella Swirl Blondies: Pour the batter into the prepared dish, then drop spoonfuls of Nutella over the surface. (I did probably 9-10 spoonfuls) Swirl the batter in the pan making “S” shapes with a butter knife.
*Other optional add-ins and drop-ins? You could swirl in peanut butter or caramel. Or you could make a batch of cookie dough (my favorite would be peanut butter cookie dough or double chocolate chip cookie dough) and press chunks of cookie dough down into the batter. The options are limitless! :)
Bake for 25-30 minutes or until the top cracks slightly and is firm to the touch and a toothpick inserted into the center comes out with moist pieces clinging to it. Remove to a wire rack and let cool completely. Or until you can’t stand it any more and have to dig in!
